Fruit concentrates are produced from fresh fruit by evaporation, at the same time separating the flesh and aromas. To ensure the durability of the concentrates during their storage and transport, they are either pasteurized by high temperature or frozen. Concentrates are transported in aseptic packaging or frozen in a low temperature while maintaining the entire cold chain from the producer to the processing site
